A traditional Moroccan chicken tagine is a slow-cooked dish that is bursting with flavors from preserved lemons, olives, and a blend of warm spices. Served over couscous, this meal is perfect for a family dinner or special occasion.
Instructions:
- Heat olive oil in a tagine or heavy-bottomed pot over medium heat.
- Add the onions and garlic, cooking until soft and fragrant.
- Mix the cumin, coriander, ginger, cinnamon, and turmeric in a small bowl. Add this spice mixture to the onions and cook for 2 minutes.
- Add the chicken thighs and brown them on all sides.
- Pour in the chicken stock and add saffron, preserved lemons, and green olives.
- Reduce the heat, cover the pot, and simmer for 1.5 to 2 hours, or until the chicken is tender.
- Garnish with fresh parsley and cilantro before serving with couscous.
