Rogan Josh is a traditional Kashmiri curry made with tender mutton and rich spices. This flavorful dish is known for its deep red color, thanks to the use of Kashmiri chilies and yogurt-based gravy.
Instructions:
- Heat oil in a large pot and add cardamom, cloves, and cinnamon. Sauté for 1 minute.
- Add the onions, garlic, and ginger, cooking until golden brown.
- Stir in cumin, coriander, chili powder, and turmeric, then add the mutton pieces. Cook until the mutton is browned on all sides.
- Whisk the yogurt and gradually add it to the pot, stirring continuously to avoid curdling.
- Pour in the mutton stock, cover, and simmer for 1.5 hours until the mutton is tender.
- Serve with steamed basmati rice or naan.

Tips:
To reduce the heat, use paprika instead of Kashmiri chili powder.
